This is special fried meehoon ala Chef Alvin which I created in Tradisi Delights its been our famous dish since I've created this dish. Today I will show you this special dish.

Ingredients
- Rice Vermicelli
- cabbage (julienned)
- carrot (julienned)
- an egg
- bean sprout
- 1 tbsp shallot (sliced)
- 1/2 tsp garlic (chopped)
- a pinch cilantro (chopped)
- 2 pcs red chili (sliced)
- oil
Seasoning
For egg - little soy sauce
- a pinch of white pepper
For fried vermicelli
- 1/2 tbsp oyster sauce
- 1/4 tsp chicken stock pwd
- a pinch of salt
- 1/4 tsp of soy sauce
- 1/4 tsp of dark soy sauce
- water
Garnishing
- fried shallot
- cilantro (chopped)
- 3 pcs red chili (sliced)
Method
- Heat up wok and heat up oil about 4 tbsp.
- Fry the shallot and garlic till fragrant. Then, take out the shallot and garlic.
- The egg is whisk with soy sauce and white pepper till well mix.
- Then, fry the egg till coagulate the pour in the shallot and garlic juz now fry till the egg fragrant.
- Add in the carrot, cabbage and fry till fragrant and soft but crunchy.
- Turn off the fire, add in the vermicelli, bean sprout and seasonings. Add a little water to let the vermicelli not dry up.
- Fry the vermicelli till well combined with the seasonings. Then, try the taste.
- Then, add in the cilantro and chili fry till the fragrant of chili and cilantro comes out.
- Serve and garnish with fried shallot, cilantro and red chili.
