Kuih Rengas

Kuih rengas is one of the traditional kuih which is deep-fried green bean which is cooked in gula melaka syrup. Kuih Rengas also called Kuih Kasturi. It is crispy outside and soft and juicy inside. It is a very unique kuih.

Ingredients
  • 400g green beans
  • 100g gula melaka
  • 100g sugar
  • a pandan knot
  • 1 tbsp rice flour
  • water
  • 2-3 tbsp flour (depends)

Batter
  • 10 tbsp rice flour
  • 8 tbsp water
  • a pinch of salt
  • 1/2 tsp lye water

Method
  1. Soak the green beans till soft for about 3-4 hours
  2. Cook the green bean with water juz covered the beans with pandan knot.
  3. Cook till dry then add in the sugar and gula melaka lastly the rice flour
  4. If it is still wet juz add a liittle of flour.
  5. Mix the batter in another bowl.
  6. Heat up oil, then shape the green bean mixture into a ball then lightly press with your palm.
  7. Then, dip into the batter and fry till golden brown.
