Youtiao Chinese Crullers

Youtiao or chinese crullers, is a long golden-brown two deep-fried strips of dough which is commonly eaten in China and Asia country. Youtiao also know as yaozhaguai in cantonse meaning oil stick. Youtiao is eaten when breakfast and with soy milk. It is also very good and tasty with bakkutteh or chikuteh. Whereas, the oil stick texture absord the soy milk and creating a unique taste. Youtiao is also very popular in Malaysia especially Streetfood.

Ingredients
  • 370g AP flour/ All-purpose flour
  • 2 tbsp rice flour
  • 265g cold milk
  • 12g baking powder
  • 4g baking soda
  • 6g salt
  • 12g oil

Method
  1. Baking soda and powder combine together then add cold milk mix well.
  2. Then, AP flour with salt is then added in with the milk mixture.
  3. Combine into a dough then add in oil. Rest 30 mins.
  4. After 30 mins, knead the dough till smooth surface then rest another 30 mins.
  5. Then, divide the dough into 2 and roll into a rectangular shape (7cm width) (the dough must at least 0.3cm and not more than 0.4cm) if not it will cause the dough do not rise properly or hollow in the inside.
  6. Then, rub the dough with some oil then wrap and rest in refridgerator for overnight or rest in room temperature for at least 3 hours frementation.
  7. Cut the dough into strips with (about 2cmX7cm) then combine two strips together and press the middle of the dough with chopstick and importantly press the end with chopstick to secure the dough.
  8. Heat up oil at least 2kg oil until hot then lightly pull the dough to about 15cm the fry the dough till golden brown.
