Kuih Ketayap is one of my childhood favourite where it is a crepe wrap with gula melaka grated coconut filling. When take a bite the juiciness from the grated coconut is overwhelming. Today I am gonna show you the easy way to make kuih ketayap.

Ingredients
- 180g flour
- 1 tbsp sugar
- 1 nos egg
- 1 tbsp oil
- 460g pandan juice
- 1/2 tsp salt
Filling
- 250g grated coconut
- 100g gula melaka / brown sugar (depends on your flavour & sweetness)
- 50g sugar
- 125g water
- a pandan knot
- 1/2 tsp salt
- 1/2 tbsp of cornstarch with 1 tbsp of water
Method
- Cream the egg and sugar, salt with well combined and no clumps.
- Add in the oil and pandan juice mix well.
- Add in the sifted flour. Mix well.
- Sift the mixture to get smooth batter.
- Heat up a non stick frying pan with brushed oil.
- Pour a little amount of batter to get a thin piece of crepe whirl till covered the base of frying pan.
- Fry till all batter used up.
- Set aside to cool.
- For the filling, cook the sugar and gula melaka with water till dissolved add in the pandan knot, salt and grated coconut.
- Cook till the grated coconut cooked through and dry then add in the cornstarch water. Mix well and set aside to cool.
